Baked Potatoes with garlic, tomato and onions

Get some "waxy" potatoes, meaning not baking potatoes. Their skin is white and clear. No need to wash. No need to peel.

Cut them into chunks and dry them. Then put them in a bowl.

Add a few splashes of good quality olive oil, grind on some fresh pepper, add a few pinches of salt and sprinkle on Paprika.

Sprinkle with garlic powder, or if you have the time use finely chopped fresh garlic cloves.

Get your favorite fresh herb (I use oragano). Take off the leaves (do not use the stems) and chop them. Add to the bowl and mix the whole thing well.

Put onto a baking tray and bake in a 375F oven. (I have a great paella pan which I use as a baking tray. It's a very versatile pan.)

Chop an onion and a tomato. Add to the bake after about 20 minutes and mix well into the baking potatoes.

Bake until potatoes are tender. About another 25 mins. Check occasionally and turn the potatoes.
