Ken's Chicken Melange
This is easy, and it can serve a whole crew.
Take a large casserole dish. Rub it all over with butter.
Then clean, slice and add any vegatables you want. I use onions, carrots, mushrooms, brussel sprouts. Slice and add a few potatoes.
Take several chicken thights. Trim off almost all the skin. Dry and add to the casserole.
Grate a whole bulb of garlic (not a clove, a whole bulb). Add to the casserole, sprinkle with olive oil and mix. Add a splash of white wine and a splash of vegetable broth. Make sure the chicken thights are covered by the vegetables.
Add a few grinds of fresh pepper and a pinch of salt.
Bake at 350F until the potatoes are just brown. Serve.
Tech Notes:
To brown this before serving put the oven on broil for a few minutes. But keep an eye on things to avoid burning.
Why are the chicken thights covered by the vegetables? To keep them from drying out and make them moist.
As with all cooking the quality of the ingredients makes a huge difference. Buy the best you can afford, and that includes the olive oil.
