Ken's Canadian Bacon Omelette

Take a thick slice of canadian bacon and trim most (but not all) the fat off, then cut into small cubes.

Saute the cubes in their own fat. Then add onions, tomatoes, fresh chopped tarragon and asparagus tips.

When everything is cooked add the egg mixture (beaten eggs with a splash of fresh cream).

Then sprinkle on a little imported parmesan-reggiano cheese. Then some fresh ground pepper and a pinch of salt.

Let cook for 2 minutes then fold and serve with multigrain toast. Ketchup and dijon mustard on the side.

Tech Notes:
As with all cooking, quality ingredients make a huge difference. Buy the best you can afford.
Some bacon is sold already cooked. Don't buy this, you need raw bacon.
