Ken's Tomato Soup
Take a bowl. Slice in some tomatoes and red peppers. Then add finely chopped carrots, onions, celery and grated fresh garlic.
Mix with olive oil. Add some ground pepper and a few pinches of salt.
Place on a roasting pan and roast in the oven. Be careful not to burn.
After roasting remove the skin from the tomatoes and red peppers.
Turn out into a dutch oven or large pan. Add your favorite fresh chopped herbs (leaves only, so stalks), chicken stock, bone broth, the remainder of tha garlic bulb and a splash of white wine.
Simmer for a while. Add water as necessary. Then serve with crusty bread.
Tech Notes:
As with all cooking, quality ingredients make a huge difference. Buy the best you can afford.
If you can't get really tasty tomatoes buy a can of San Marzano. But make sure it has the DOP label. These are incredibly tasty tomatoes.
