Poached Wild Salmon

This is healthy and tasty.

Grab a chunk of wild salmon. Butter a casserole dish and place the salmon in the dish skin down.

Put a few knobs of butter on top of the salmon. Chop some fresh garlic and onions, mix with a small amout of fine olive oil then add to the pan. Grind on some fresh pepper. Add a small pinch of salt. Then broil briefly until just brown. Don't let anything burn.

Chop and add your favorite fresh herb. I use dill.

Add some vegetable stock and a splash of good white wine.

Optional: Add some cooked saffron rice, or better, rice from a paella if you have any left over.

Then cover the casserole dish and cook in the oven at 350F.

Serve alone or with saute spinach or whatever you want.
